										<content:encoded><![CDATA[<p>It&#8217;s no secret that Lake Erie is the Walleye Capital of the World, but where might be the best location to plan your next <a href="https://lakeeriefishingadventures.com/">Lake Erie Fishing Charter</a>? Most people will tell you that Port Clinton, Ohio is THAT place. For many years the Western Basin of Lake Erie have been the focus for people looking to cash in on Lake Erie&#8217;s bounty, but that has been changing, and people need help accepting change.</p>
<p>In recent years the walleye hatch has increased the population to near-record numbers. Historically, it was thought that most walleye spawned in the Western Basin. The walleye would migrate to shallow areas to spawn during the fall and winter months, typically finished by April. During May and June, the walleye would migrate back to other parts of the lake, where they spend the warmer months in cooler, deeper water.</p>
<p>A record number of walleye still spawn primarily in the Western Basin, but the population is now spilling over into the Central Basin.</p>
<p>At one time, fishing was seasonal, and it was hard to catch fish is certain areas of the lake at certain times of the year but that&#8217;s all changing due to the massive amount of walleye in Lake Erie right now. Yes, the fish are still heading towards the Western Basin of Lake Erie during the Fall, then had back in May and June.</p>
<p>This is where Lorain comes in to play&#8230;</p>
<p>Lorain holds the most food for the walleye. In the past several years, Lorain has enjoyed <em>excellent, year-round walleye fishing</em>. With deeper, cooler water than the Western Basin, the Central Basin holds a significant amount of bait that keeps the fish around.</p>
<p>We have seen an increase in fishing charters moving their operations to Lorain. World-Class walleye tournaments and derbies have been won just outside the port of Lorain in the last few years.</p>

We can get the shorts out for a few days this month with the weather turning nicer.</p>
<p>Lorain has been holding a decent amount of nice walleye during the past month. Most of the fish in the Western Basin are finishing up the spawn. May is always a transitional month of post-spawn walleye on a feeding frenzy as they migrate back to the Central Basin and settle in to their summer feeding grounds in and around Lorain.</p>

<li>2 lbs. skinned Walleye</li>
<li>2 tablespoons Lemon Juice</li>
<li>2/3 cup Grated Parmesan Cheese</li>
<li>1/3 cup butter &#8211; softened</li>
<li>3 tablespoons Mayonnaise</li>
<li>4 tablespoons Onion &#8211; finely chopped</li>
<li>1/4 teaspoon Salt</li>
<li>1/4 teaspoon Garlic powder</li>
</ul>
<p><em><strong>Method 1</strong></em><br />
Place a single layer of fillets in a well greased baking dish. Brush with lemon juice and let stand for 10 minutes. Broil fillets about 4 inches from heat source for 6-8 minutes or until fish flakes apart easily with a fork. Meanwhile combine all remaining ingredients in a separate bowl. Remove fish from broiler and spread with cheese mixture. Broil 2-3 minutes longer or until lightly browned.</p>
<p><em><strong>Method 2</strong></em><br />
Place a single layer of fillets on a well greased piece of foil. Brush with lemon juice and let stand for 10 minutes. Place foil with fillets on a hot grill. Cook on high 6-8 minutes until fish flakes apart easily with a fork. Meanwhile combine all remaining ingredients in a separate bowl. Spread cheese mixture onto fish. Cook with grill lid down 2-3 minutes longer or until lightly browned.</p>

<ul>
<li>2 pounds ground venison</li>
<li>2 onions, chopped</li>
<li>4 teaspoons minced garlic</li>
<li>2 tablespoons chili powder</li>
<li>2 teaspoons salt</li>
<li>2 teaspoons dried oregano</li>
<li>4 (14.5 ounce) cans stewed tomatoes</li>
<li>1 (15 ounce can tomato sauce</li>
<li>1 (15 ounce) can kidney beans with liquid</li>
<li>2 tablespoons of Bacon Grease or olive oil</li>
<li>1 (1.37 ounce Gold Medal) chili seasoning mix</li>
</ul>
<p>Combine ground venison, onion, garlic, and bacon grease in a large pot and brown the meat.</p>
<p>Combine browned meat with the remaining ingredients in a large crock pot and cook on low for 6-8 hours, stirring occasionally.</p>

<li>1/2 lb. chopped Bacon</li>

<li>4 Carrots &#8211; sliced</li>
<li>2 15 oz. cans of Corn</li>
<li>6 cups Chicken Broth</li>
<li>2 cans Jalapeño Cheese dip &#8211; Frito-Lay</li>
<li>2 cans evaporated Milk</li>
<li>4 teaspoons Old Bay seasoning</li>
<li>4 cups Water</li>
<li>2 lbs. Walleye</li>
</ul>
<p>&#8211; In a large stock pot fry bacon<br />
&#8211; Add onion, celery, carrots, potatoes, and sauté<br />
&#8211; Add chicken broth, water, and simmer until potatoes are tender<br />
&#8211; Add in corn,jalapeño cheese dip, old bay seasoning, evaporated milk, pre-cooked Walleye and simmer an additional 20 min.</p>
<p><em><strong>Pre-Cooking the Walleye</strong></em></p>
<p>Cut Walleye into bite sized chunks. Boil 2 quarts of water and then add Walleye chunks for 5 minutes. Drain and set aside. Do not over cook the Walleye or it will become too flakey and fall apart.</p>
<p><em>Pro Tip: Use cheek meat instead of fillets when available!</em></p>

<li>Toothpicks</li>
</ul>
<p>Wrap each duck piece with 1/2 a strip of bacon and secure with a toothpick. Combine bacon-wrapped duck pieces and marinade in a ziploc bowl or bag. Marinade in the refrigerator for 12-24 hours. Cook pieces on a hot grill until bacon is done.</p>
<p>This simple recipe is <em>by far</em> our favorite way to enjoy wild ducks and geese taken afield.</p>
